We had some laugh on Facebook about 'butter boy' and I finally get to meet him on Saturday!
It started from Harlyn, she told me that the person delivered the butter to her is very cute and everybody wants picture (including me). We behave like some teenage girls (or desperate housewives?), having lots of fun discussing about the boys.
Not sure if he is ok for me to mention his name on my blog. Anyway, if you bake a lot or own a bakery, cafe, patisserie and like to purchase butter, cream cheese, whipping cream, flour, etc. Let me know and I'll give you the contact.
Baked some Double Chocolate Espresso Crackle Cookies and Banana Crumb Muffins for him to show my appreciation as he has been really accommodating to my request.
The cookies are like soft crusted brownies, a change from the usual chewy cookies I always bake.
Double Chocolate Espresso Crackle Cookies

Ingredients
57g Butter
200g Cadbury Gold Chocolate Bar (70% Cocoa)
1 tsp Instant Nescafe Coffee Powder
50g Sugar
2 Eggs
300ml Condensed Milk
1 tsp Vanilla Extract
320g Plain Flour
1 tsp Baking Powder
1/2 tsp Salt
228g Hershey Semi Sweet Chocolate Chips
Some icing sugar (sifted) for coating
Method
1. Preheat oven to 170 degree C. Line baking sheets with parchment paper.
2. In a saucepan, melt butter and chocolate bar on the stove over medium heat.
3. Add coffee powder after it's melted. Let cool for 5 mins.
4. Stir in sugar and eggs one at a time, stirring well after each addition. Let cool for 5 mins.
5. Mix in condensed milk and vanilla extract.
6. Add flour, baking powder, salt and chocolate chips. Mix well to combine.
7. Dough will be soft, chill overnight or for 8-12 hours.
8. Sift icing sugar in a bowl, use the cookie scoop to scoop the dough and toss in icing sugar.
9. Placed on prepared baking sheet, space them about 1.5 inches apart.
10. Bake for about 10 mins, until starting to feel firm in the centre.
11. Cool on baking sheet on wire rack for 5 mins. Transfer cookies to wire rack to cool completely.
Banana Crumb Muffins
Ingredients
190g Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
4 Bananas, mashed
1 Egg
50ml Canola Oil or Melted Butter
100g Sugar
55g Brown Sugar
Crumb Toppings
Ingredients
67g Brown Sugar
1/2 tsp Cinnamon
16g Flour
28g Cold Butter
Method
1. Preheat Oven to 190 degree C. Line muffin pan with liners.
2. Mix together flour, baking powder, baking soda, salt and cinnamon. Set aside.
3. In another bowl, mix together bananas, sugars, egg, and oil (or melted butter). Add this to the dry mixture, mix until just combined. Do not overmix.
4. To make the crumb topping, stir together brown sugar, cinnamon and flour. Cut in the butter until the mixture looks like small crumbs.
5. Divide muffin batter into a lined muffin pan and sprinkle the crumb topping.
6. Bake for 20 mins, until toothpick inserted into centre comes out clean.
