Bed of roses

All my friends know that I am a crazy baker.  Once I start, I cannot stop.  I will update this blog with the latest experiment when I get the chance to use the laptop.

I love bread, soft fluffy bread.

Making bread sounds easy, dump everything in a mixer or a bread maker and wait for magic to happen.  Well, trust me, it is not.  I have made bread so hard and I am sure the car will be dented if I threw at it.

I am not elaborating on the instructions and different methods in bread making here - it will either scare you away or bore you to death.

Here is my bed of roses, sprinkle with sugar and sesame seeds.








































Recipe (credit to Soh Pin Tee from Facebook)

Ingredients

340g Bread Flour
210g Fresh Milk
4g Yeast (1/2 tbsp)
40g Butter
4g Salt (1/4 tsp)
50g Sugar

Method

1.  In a mixer, pour 1/2 the amount of bread flour, follow by yeast and cover it with the balance bread flour, sugar and salt.

2.  Turn on the mixer at low speed (dough hook) and mix for 1 min.  Pour in the fresh milk gradually while the mixing,

3.  Mix for 1 min and add butter.  Turn up the speed and continue mixing until dough is smooth and elastic (approximately 20 mins).

4.  Place the dough in a lightly greased bowl and proof for 60 mins or until the dough double in size.

5.  Punch out gas and divide the dough in 6 portion and further divide each portion into another 6.  Rest the dough for 10 mins.

6.  Proceed to shape the dough.  You can find detail instruction on how to shape the rose on Wendy's blog.

7.  Proof for 40-60 mins.

8.  Apply a thin layer of egg wash, sprinkle some sugar or sesame seeds and bake in a preheated oven at 180 degree celsius for 15 mins.  Remove from pan immediately and cool on the rack.


Proofing the dough:  You can proof the dough in an oven with a glass of hot water.  In cool weather, proofing may take a longer time.  Cover bowl lightly with cling wrap if proofing is done outside the oven to prevent the dough from drying.

Using Bread Maker:  This recipe can be used in a bread machine.  Place all liquid follow by dry ingredients.  Place the yeast and salt apart, do not mix them together.
