Something Sweet

I have been cracking my brains thinking of what to do with the 1kg cream cheese sitting in the fridge. Finally decided to bake some bread with cream cheese filling.  Instead of enclosing the filling inside the bun, I shape it as a muffin cup.

Botak ate two at one go!


Cream Cheese Bun

Ingredients
340g Bread Flour
210g Fresh Milk
4g Yeast (1/2 tbsp)
40g Butter
4g Salt (1/4 tsp)
50g Sugar

Filling
230g Cream Cheese
50g Sugar
80g Plain Yogurt
30ml Whipped Cream

Method (Filling)
1. Beat cream cheese and sugar until smooth.
2. Add yogurt and whipped cream and mix until combined.
3. Cover the bowl, chill in the fridge.


Method (Bread Dough)

1. Refer to this link for steps 1-5 until punch out gas.  Divide the dough into individual portion of 50g.  Set aside to rest for 10mins (covered).
2. Flatten one portion of dough and roll it into a circle, roughly 8cm.  Pressed into a greased muffin pan to form a cup.  Repeat the same steps until you finish all the dough.  (I am using a 12 cups muffin pan).
3. Proof in the oven (do not switch on) for 40mins.
4. Before baking, brush some the dough with egg wash gently and fill the dough with cream cheese.
5. Bake in a preheated oven at 180 degree C for 20mins.  Remove from muffin pan and cool on the rack immediately.
6.  When the buns are cool, you can decorate with sprinklers, fruits, icing sugar or cocoa powder.
